Endive with Gorgonzola and Red Grape

Ingredients:

3 heads of endive ends cut off, separated, and washed

1 cup of chopped red grapes

1/2 cup of pickled onions (recipe HERE)

6 ounce wedge of gorgonzola

8 ounces of Neufchâtel or Plain Cream Cheese

3 TBSP of chives (divided)

2 tbsp heavy cream

Instructions:

With a stand or hand mixer blend the cheeses, cream, and 2 tbsp of the chives until smooth.

Put 1 tsp of the cheese mixture in each endive leaf and top with red crapes and pickled red onion. Plate and garnish with remaining chives.
