Amaretto Snow Cream

Ingredients:

8 Cups of freshly fallen snow*

1/2 cup of confectioners sugar (powdered)

1/4 cup of half and half

1/4 cup of milk

1/2 tsp almond extract

1/2 tsp of vanilla

Candied Almonds:

1/3 cup of almonds (crushed)

2-3 tbsp of brown sugar

1-2 tbsp of water

*Depending on where you are and the wildlife around you, make sure you collect snow relatively quickly from when it has fallen. Don’t collect snow from under the eaves of a house in case of snow runoff from you roof. Your roof has all kinds of bacteria and chemicals so it’s important to collect snow away from your home so you don’t ingest anything “unsavory”.

Instructions:

In a small fry pan on medium/low add almonds, brown sugar, and water. stir continuously until all the sugar has melted and has coated the nuts. set aside on a piece of parchment paper to cool.

In a small mixing bowl combine, milk, half and half, confectioners sugar, and extracts. whisk until fully combine and refrigerate for at least an hour.

Take all ingredients outside and prepare outside, preferably in the snow. Place your large plastic bowl in the snow and add your clean snow. Add your cream mixture to the snow and mix well until both are fully combined. Serve in a small bowl, or glass and top with your candied almonds. Enjoy!

This is a treat best to enjoy outside or when camping because it melts very fast! Excellent project to do with children. Play with different flavor pallets such as chocolate, or add sprinkles instead of candied almonds. For an adult treat, add baileys (just be sure to chill it before you pour over the top).
