Spice Rubbed Chicken wings with Poblano Ranch

These are my “Oh shit, I forgot to defrost the chicken wings” recipe. Also great because you can have all the ingredients on hand without the worry of them spoiling. Awesome if someone pops by unexpectedly or you just don’t have time to run to the store.

Ingredients:

5 lb of frozen chicken wings (do not defrost prior)

1/3 cup of butter (melted)

2 Tbsp umami seasoning

2 Tbsp montreal steak seasoning

1 Tbsp poultry seasoning

1 shallot finely chopped

3 garlic cloves

1 cup of water

1 tsp of salt

For the poblano ranch:

*1 pouch of ranch mix (I prefer Simply Organic, but any mix is fine)

*1/2 cup mayo

*1/2 whole milk

1/4 cup cholula green hot sauce

2 tbsp fresh or freeze dried cilantro

Juice of 1 lime

**1 poblano pepper

**2 tsp of avocado oil

**pinch of salt

*Note: If you are someone who doesn’t regularly keep milk or mayo in the house, you can just buy pre made ranch and add in the extras. No need to waste a jar of mayo or a carton of milk if the rest won’t be consumed.

**you can sub this for 1/2 can of green chilies

Instructions:

In an instant pot add 1 cup of water, shallot, garlic, and salt. Cook on high pressure for 15 minutes. Preheat oven to 450.

Combine dry seasonings to make your rub.

In a large bowl, toss the chicken in the butter and then place on a cookie sheet with a wire rack and bake for 20 mins.

Toss the chicken in the butter again. Add the rub and toss thoroughly. bake for another 20 minutes at 450.

For the Poblano Ranch:

Make ranch as prepared on the packet with mayo and milk. Refrigerate 4-12 hours. I usually make it the night before if I can remember.

Roast the poblano pepper by stemming, deseeding, and quartering it. Place it on a cookie sheet lined with parchment skin side up. Brush it with avocado oil, and salt. bake at 450 for 10 mins on each side.

Peel the skin and put in a blender with your prepared ranch, lime, cilantro, and hot sauce. refrigerate until wings are ready.

Serve with carrot sticks and celery. Perfect for game day, a pot luck, or just keep all ingredients on hand for when you don’t feel like going to the grocery store.
