Dungeness Crab Grilled Cheese

Ingredients:

2 ounces of Dungeness crab meat

1 tbsp mayo

1 tbsp of cream cheese

squeeze of one lemon wedge

1/4 teaspoon of dill

pinch of smoked paprika

pinch of white pepper

2 slices of Jarlsberg cheese

2 slices of fresh sourdough sandwich bread

2 tbsp of grass-fed butter

Instructions:

In a small bowl combine crab, mayo, cream cheese, lemon juice, dill, paprika, and pepper. Combine well.

Make the sandwich by putting the Jarlsberg on each slice of bread and then add the crab meat.. you want the cheese surrounding the crab meat so it all melts together.

Butter the outsides of the bread and cook over medium on a skillet until golden brown. flip your sandwich and cook until its golden on the other side. If at this point the cheese isn’t completely melted, cover the skillet and remove from heat. This will cook it at a temperature high enough to melt the cheese, but not burn the bread.

Serve with your favorite salad or sea salt and vinegar chips.
