Duck Fat Red Potatoes

Ingredients:

2 pounds of steamed and cool to touch whole red potatoes (If I’m in a hurry I buy the whole steam in bag variety and pop them in the microwave. You can also cook them in an insta pot)

2 TBSP of rendered duck fat (you can find this in most organic grocery stores, near the cooking oil)

1 tbsp finely chopped fresh thyme

1/2 tsp of sea salt

1/4 cup of fresh grated parmesan

Instructions:

Take your cooled potatoes and quarter them. Your potatoes should still be warm enough to melt the duck fat over them. If they aren’t you may need to heat the duck fat to get it to liquid form. Toss your potatoes with the duck fat, salt, and thyme.

In an air fryer, cook them for 15-20 mins on the hottest setting. Tossing occasionally

OR

Place on a cookie sheet and bake at 425 tossing every 5-7 minutes until crispy. Garnish with parmesan.

These are great as any side dish or in lieu of breakfast potatoes.
