BBQ Flank Steak
This is my dad, Whit Budge’s, recipe/method for grilling flank steak. Not mine. I learned from him.
It is tried and true and fail proof. It’s a coveted recipe by those who know my dad and who he has made it for. He has used Soy Vay for the marinade and it is absolutely delicious. My mother and I developed this marinade when we ran out of Soy Vay one weekend at Black Butte Ranch. I prefer it as I’m not a huge fan of ginger. But that is a personal preference. If you are in a hurry or don’t want to buy all of these ingredients… Soy Vay marinade is just fine.
Ingredients:
1 flank steak (3-4 pounds)
For the marinade:
1/3 cup brown sugar
1/4 cup hot water
1 TBSP minced garlic
1 cup of soy sauce
1 tsp horseradish
Instructions:
Combine all ingredients for the marinade in the bowl and whisk. Put your flank steak in a resealable freezer bag and pour the marinade over it. Shake it around in the bag so the marinade coats the steak.
Let it marinate for 8-16ish hours (I let it sit overnight).
Heat your grill to 600 degrees and place the steak on the hottest part of the grill reserving the marinade its ben soaking in. . Close the lid and let it cook for 3 minutes or until the grill is brought back to 600 degrees. Turn the steak 90 degreed (turn don’t flip, keep it on the same side… this is for grill marks). Let it cook another 3ish mins or until the grill is brought back up to 600. Then flip your steak and pour the marinade over the top. Let it cook another 3-5 mins.
Pull your steak off the grill and let rest for 10 mins under tin foil.
Slice and serve!
We usually have this with fresh French bread and Caesar salad!
