Snickerdoodle Crispy Treats

Brunch for one at the Dompe House

Two of my favorite goodies wrapped up into one!

Ingredients:

1 large box of Rice Crispies (around 10 cups)

6 cups of HIGH QUALITY marshmallows (or even better, homemade… We make Ina Garten’s recipe for mallows in our house)

1 stick of salted butter (1/2 cup) plus more to grease your pan

1 tbsp cinnamon

2 tbsp cinnamon sugar blend (1/2 tsp of cinnamon, 1 tbsp and 2.5 tsp of sugar)

Instructions:

I’m going to say this again here… FORGET THE CHEAP MALLOWS! Marshmallows make ALL the difference when it comes to these treats! It is worth your time and energy to make some from scratch. The do have to sit overnight but last well over a month in Tupperware in your pantry without getting stale.

In a large stockpot melt the butter over medium heat. add your mallows and stir continuously until completely melted. Add 1 tbsp of cinnamon to the mallows and stir until evenly incorporated. remove from heat and add your crispies.

in a greased 11x9 baking dish, dump your mix and smooth the top, but don’t press! they will turn into bricks and too hard to eat. top with cinnamon sugar. Cover and let sit until completely set (2-3 hours).

Cut into squares. I like to wrap them in cellophane and keep in the pantry for grab and go.
