Shrimp & Avocado Salad

This has become a staple in our house. So quick, delicious, and healthy!

Ingredients:

4 small haas Avocados (diced)

1/2 pound of medium sized shrimp (peeled, deveined, and tails off)

1/4 cup finely diced red onion

1/4 cup rough chopped cilantro (less if you are a moderate cilantro eater)

Lime wedge 

pinch of salt

Dressing:

1/4 cup Avocado Oil (or olive oil)

1 T white wine vinegar

2 t green hot sauce

Juice of 1/2 a lime

1 t of chives

1/2 t ground cumin 

Pinch of salt

Pinch of pepper 

Instructions:

Combine all ingredients for the dressing in a small bowl and whisk until fully combined. Put avocado, shrimp, red onion, and 1/2 of the cilantro in a bowl. Add salt and toss with dressing. top with remaining cilantro and top with lime wedge.
