Pickled Red Onions

I always have a jar of these in my fridge

Ingredients:

1 red onion thinly sliced

1/2 cup white wine vinegar

1/2 cup of boiling water

1/2 tsp of sea salt

1 tbsp of raw sugar

1 tsp of black peppercorn

1 clove of garlic

16 ounce mason jar, sterilized with lid.

Instructions:

In a 16 ounce mason jar add in peppercorn, garlic, sugar, and salt. Fill the jar with as many onion slices that will fit. fill half the jar with vinegar and the other half with boiling water. add the lid and shake. Leave in fridge overnight.

Keep in the fridge. Lasts for up to 6 months.
