Marinated Mozzarella Pearls
Ingredients:
2 - 16 ounce tubs of pearl size mozzarella.
3 tbsp of Italian herbs (trader joes soffrito or freeze dried preferred)
1/2 tsp of red pepper flakes (more if you like spicy)
1 to 1 1/2 cups of olive oil
1/2 tsp of salt (fine sea salt or pink Himalayan preferred)
Specialty tools: 32 ounce mason jar
Instructions:
Drain, rinse, and pat dry you mozzarella pearls and add to your mason jar. Add your Italian herbs, garlic, and pepper flakes. Fill the jar with olive oil leaving a bit of room at the top. Add your salt. shake vigorously.
Let sit in fridge for a minimum of 1 hour. The longer you wait, the stronger the flavor. Serve with antipasto, in salad, or toss with cherry tomatoes and balsamic for a picnic style caprese.
