Baked Onions
Ingredients:
2 bags of fresh white pearl onions, trimmed and skinned (3-4 cups)
1/2 cup of finely chopped mushrooms
3/4 cup of fresh grated parmesan cheese (divided)
1/4 cup of half and half
2 tbsp butter
1 clove of garlic, peeled and minced
1 tbsp of chopped chives
1/4 tsp black pepper
1/4 tsp of nutmeg
Instructions:
Preheat your oven to 400 degrees. In an oven safe skillet sauté over med high heat, add the onions with the butter until they slightly soften. Add nutmeg, garlic, pepper, salt, and mushrooms. As soon as mushrooms start to soften turn the heat to medium low. Add the half an half and 1/2 cup of parmesan. stir continuously until a sauce forms.
Top with parmesan cheese and pop in the oven for 15 minutes or until the cheese is brown and bubbly. Let it cool for 5-10 minutes and serve.
These are amazing with roast chicken or steak. Great to serve on Thanksgiving as well!
